12 Must Have Superbowl Appetizers!


My mom promised my dad a long time ago if the Minnesota Vikings ever made it to a Superbowl, she would throw him a party because he loves the Vikes (and we all do, too, because of him). Unfortunately, since they've been married, she's never had the chance, but the promise still stands for one day. Last year, when Randy and I got married, being that he's a huge Seahawks fan, we all gathered to watch the NFC Championship the day after our wedding. As you know, they won (barely, just like this time around), and it was up to me to also offer to throw a party for my new husband. :) I had so much fun doing it, so now it will be a tradition to host a Superbowl Party whether the Seahawks or Vikings are in it or not. This year, we just have more reason to cheer again. :) The best part, though, is always the food, and thanks to some amazing blogging friends, I've rounded up 12 Must Have Superbowl Appetizers you can serve at your party! Parmesan Garlic Boneless Buffalo Wings


I LOVE football. Everything about it. The actual sport. The players. The FOOD. The drinks. It's just my favorite spectator sport by far. So, when it comes to the Superbowl, I literally can't wait. Even though I think my husband and I are playing it low key this year and just having a little party among ourselves, I'll still be cooking up some yummy appetizers as if we were throwing a huge bash. My husband made these Parmesan Garlic Boneless Buffalo Wings a few weeks ago for the first time, and they were SO good. We made them again this last weekend, and yes, we'll be making them again for the Superbowl. I wanted to share the recipe with you guys today, and tomorrow, I'll be featuring a roundup of some of the best recipes for Superbowl Appetizers, courtesy of amazing bloggers. :)

Parmesan Garlic Boneless Buffalo Wings Recipe

Ingredients:


Boneless Wings (Makes about 24 wings):

2 chicken breasts, cut into 1 inch pieces
1 cup all-purpose flour
2 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper
1/4 tsp paprika
4-6 cups vegetable oil

Parmesan Garlic Sauce: 

6 cloves garlic
2 tbsp olive oil
1/2 cup mayonnaise
1 tbsp corn syrup
2 tbsp Parmesan cheese 
1 tsp lemon juice
1 tbsp apple cider vinegar
1/4 tsp thym
1/4 tsp marjoram
1/4 tsp oregano
1/4 tsp basil
1/2 tsp red pepper flakes
1/2 tsp salt
1/4 tsp black pepper

Directions:

1. Saute garlic in small skillet until tender.
2. Add garlic and rest of ingredients to bowl and mix well.
3. Season with salt and pepper more or less to taste.
4. Refrigerate sauce 2-3 hours or overnight.
5. While sauce is chilling, prepare fryer or skillet with vegetable oil.
6. Cut pieces of chicken breast into 1 inch pieces.
7. Mix flour with salt, pepper, cayenne pepper, paprika.
8. Coat pieces of chicken with flour mixture.
9. Fry pieces four to six at a time until they have formed a nice, brown, crispy skin.
10. Transfer pieces to plate lined with paper towels and allow excess grease to drip off.
11. Toss chicken wings with sauce or serve them with the sauce on the side. 
12. Enjoy! :)

These have easily become a favorite appetizer for us, and while not the healthiest, definitely delicious and perfect for the Superbowl! Let me know if you have any questions, and remember to check out tomorrow's roundup of more delicious appetizers!

Anniversary Series: The Reception


Warning: This post contains way too many photos. Photo overload for sure. I apologize, but I just couldn't pick the ones I loved most, and there are more coming in a future "Our Support System" post! :) 

My favorite part of our wedding day was when we exchanged rings, but it was followed a close second by the entire reception. There was so much joy and love in the air, and being surrounded by all of our family and friends that helped us celebrate such a great occasion just felt wonderful. I don't think I stopped smiling that entire day except to listen to the speeches and concentrate on my new husband. :)





Thank you so much to Sherry Berry for putting my dreams of my wedding cake into reality! I wanted to have a "cupcake cake" with a top layer for us to enjoy on our 1st anniversary. Unfortunately, a friend knocked into the display and sent the top cake flying, so we didn't get to eat it. But, that's ok because the lemon, red velvet, and chocolate cupcakes were all AMAZING! 



I loved our winter theme... right after Christmas! There were so many other decorations that our photographer didn't get pictures of, but it was so much fun to put together. My mom has the best ideas!




I can't say how much I love our wedding party! Best. friends. ever. 






Such a heartwarming speech that led me to tears! I love you, Nikki!



And Jake's speech was incredible, too! Heard a bunch of interesting stories about my husband during that one. ;) 




I already have way too many pictures, but both of our parents spoke, as well as our grandfathers. Thank you for your wonderful speeches, and of course, support!



We cut a cupcake, and as you can see from Randy's face below, he's glad it was just a small piece because I had to shove it in his face...

I'm an avid Vikings fan due to the fact that my dad was born in Minnesota. Randy, from Washington, is an avid Seahawks fan. Had to get a rivalry pic. And since the Seahawks are in the Superbowl (wow, what a game to get there!), GO HAWKS!


Hope you enjoyed a trip down memory lane looking at our reception with me! It's been so much fun to look back on all of these posts, and it makes me feel more and more blessed every time I do. We have so many loving people in our lives, and we are so appreciative of you all!!
