Pumpkin Crunch Recipe

Does anyone else feel like it takes them a whole week to recover from traveling? Thankfully, the air conditioner at work needed some part to be replaced, so I walked in this morning, not feeling the best admittedly, and I almost walked straight out because it felt like a July day in that building. I always say I'm more productive working from home, and today has been no exception. I've even caught up on some laundry, cleaning, and unpacking from last weekend. Yes, I'm a little slow this week, and the husband keeps pointing to my suitcases and sighing... maybe today he'll be surprised when he gets home?

Last night, my husband and I went to a friend's birthday party, and because I'm a typical girl, I love all things fall and PUMPKIN! So, I decided to bring one of my favorite fall desserts. I wait for the opportunity to make this dessert every year because my mom always made it for us. And yes, it's that dessert that I can sit down and eat a whole dish of myself in one sitting (well, maybe not that fast). It was a hit last night, so I thought I'd share this incredibly simple recipe with you all, so you can enjoy the pumpkin and fall deliciousness as much as I do (and did again for breakfast this morning). :)

PUMPKIN CRUNCH

Ingredients:

1 large can pumpkin puree (29 oz)
1 can evaporated milk (12 fl oz)
4 eggs
1 1/2 cups white sugar
1 tsp pumpkin pie spice
1 tsp cinnamon
1 tsp salt
1 pkg yellow cake mix (around 18 oz)
1 cup chopped pecans
1 cup margarine, melted
1 container whipped topping (8 oz), optional

Directions:

1. Preheat oven to 350 degrees F. 
2. Lightly grease one 9 x 13 inch baking pan.
3. In large bowl, combine pumpkin, evaporated milk, eggs, sugar, pumpkin pie spice, cinnamon, and salt.


4. Spread into greased pan.
5. Sprinkle cake mix over top of pumpkin mixture evenly and pat down.
6. Sprinkle chopped pecans evenly over cake mix.
7. Drizzle melted margarine on top of cake mix and pecans.


8. Bake for 1 hour or until golden brown.



9. Optional: Top with whipped topping or serve on the side. (I decided not to for this one!)
